Here’s a delicious Savoury Samp recipe, a popular South African dish enjoyed for its rich, comforting flavors.
Ingredients:

2 cups dried samp (crushed dried corn)

4 cups water (for soaking)

4 cups vegetable or chicken stock

1 onion, finely chopped

2 cloves garlic, minced

1 cup diced tomatoes

1 teaspoon curry powder

1 teaspoon paprika

½ teaspoon ground black pepper

1 teaspoon salt (adjust to taste)

Instructions:

Soak the Samp—Rinse the samp under cold water and soak it overnight (or for at least 4 hours) to soften it. Drain before cooking.

Cook the Samp- Bring 4 cups of stock or water to a boil in a large pot. Add the drained samp and simmer for 1.5 to 2 hours, stirring occasionally, until tender.
