Ingredients

Here’s what you’ll need to make a pot of delicious curried potato soup (serves 4):

  • 2 tablespoons olive oil or butter

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 1 tablespoon ginger, minced (optional but recommended)

  • 2 teaspoons curry powder (adjust to taste)

  • ½ teaspoon ground cumin (optional)

  • 4 medium potatoes, peeled and diced

  • 1 medium carrot, chopped

  • 1 celery stalk, chopped

  • 4 cups vegetable broth or chicken broth

  • 1 cup coconut milk or cream (for richness)

  • Salt and pepper, to taste

  • Fresh coriander (cilantro) or parsley, for garnish

  • A splash of lemon or lime juice brings a refreshing hint of zest

Instructions

Step 1: Sauté the Aromatics

Warm olive oil or butter in a large pot over medium heat. Add the diced onions and cook for 4 to 5 minutes, stirring occasionally, until they turn soft and slightly see-through. Add garlic and ginger, cooking for another 1-2 minutes until fragrant.

Step 2: Add the Spices

Stir the curry powder and cumin into the pan and let them cook briefly in the hot oil for around 30 seconds to release their aroma. This process enhances their aroma and brings out their rich, deep flavors for the soup.

Step 3: Build the Base

Add diced potatoes, carrots, and celery. Stir to coat with the spice mixture. Add the broth and allow the mixture to come to a light simmer.

Step 4: Simmer

Lower the heat, place a lid on the pot, and let it simmer for 20–25 minutes, or until the potatoes become tender and mash easily.

Step 5: Blend (Optional)

Use an immersion blender for a smooth texture, or blend just half of the soup to keep some chunky bits for contrast. You can also leave it fully chunky if you prefer a rustic finish.

Step 6: Add Coconut Milk

Mix in the coconut milk (or heavy cream) and add salt and pepper according to your preference. Allow the soup to warm for another 5 minutes without bringing it to a boil.

Step 7: Garnish and Serve

Enjoy it warm, topped with fresh cilantro, parsley, or a drizzle of cream. To enhance freshness and flavor, squeeze in a bit of lemon or lime juice right before serving.
