Sosatie - Recipe

Sosaties are South African marinated meat skewers, traditionally made with lamb or chicken, and infused with a flavorful Cape Malay-style curry marinade. These sweet, tangy, and mildly spicy kebabs are a favorite at South African braais (barbecues).

Ingredients:

For the Marinade:

  • 2 tablespoons vegetable oil

  • 1 large onion (finely chopped)

  • 2 garlic cloves (minced)

  • 1 tablespoon curry powder

  • 1 teaspoon turmeric

  • 1 teaspoon ground coriander

  • ½ teaspoon cumin

  • 1 tablespoon brown sugar

  • ½ cup white vinegar

  • ½ cup apricot jam

  • ½ cup water

  • Salt and pepper (to taste)

For the Sosaties:

  • 1 kg (2.2 lbs) lamb or chicken (cut into cubes)

  • 12 dried apricots (soaked in warm water for 15 minutes)

  • 1 red bell pepper (cut into chunks)

  • 1 yellow bell pepper (cut into chunks)

  • 1 onion (cut into chunks)

  • Wooden or metal skewers

Instructions:

Step 1: Prepare the Marinade

  1. Heat oil over medium heat and sauté the onions until soft.

  2. Add garlic, curry powder, turmeric, coriander, and cumin. Stir for a minute to release the flavors.

  3. Stir in brown sugar, vinegar, apricot jam, and water. Cook the dish for 5 minutes, allowing the sauce to thicken.

  4. Season with salt and pepper. Let the marinade cool.

Step 2: Marinate the Meat

  1. Place the meat cubes in a bowl and pour the cooled marinade.

  2. Cover and refrigerate for 4-6 hours (overnight for best results).

Step 3: Assemble the Skewers

  1. Thread the marinated meat, dried apricots, peppers, and onion chunks onto skewers.

  2. Alternate ingredients for a colorful presentation.

Step 4: Cook the Sosaties

  1. Grill/Braai Method: Preheat the grill or braai and cook skewers for 10-12 minutes, turning occasionally.

  2. Pan-Fry Method: Heat a pan with some oil and cook skewers over medium heat, turning until browned and cooked through.

  3. Oven Method: Bake at 200°C (390°F) for 20 minutes, turning halfway.

Serving Suggestions:

  • Serve with yellow rice, fresh salad, or traditional South African chutney.

  • Pair with a glass of South African wine for an authentic experience.
