Potjiekos (pronounced poi-key-kos), meaning "small pot food," is a quintessential South African dish cooked in a cast-iron pot over an open flame. This slow-cooked, layered meal is known for its rich flavors and hearty ingredients. Potjiekos is perfect for gatherings and outdoor cooking, traditionally made with meat, vegetables, and a blend of spices.

1. Traditional Beef Potjiekos
Ingredients
For 6-8 servings:

1 kg beef (oxtail, chuck, or shin), cubed

2 tbsp vegetable oil

2 onions, chopped

4 garlic cloves, minced

4 carrots, sliced
-
4 potatoes, quartered
-
2 cups green beans, trimmed

1 cup mushrooms, sliced

2 tomatoes, chopped

1 cup beef stock
-
1 cup red wine (optional)
-
2 tbsp Worcestershire sauce

2 tsp paprika
-
2 tsp dried thyme
-
Salt and pepper to taste
Instructions
Prepare the Fire:
Light a fire and let it burn down to hot coals. Place the potjie pot over the coals.
Brown the Meat:
Heat the oil in the pot and brown the beef in batches. Remove and set aside.
Sauté the Onions & Garlic:
Add onions and garlic to the pot and sauté until translucent.
Layer the Ingredients:
Return the beef to the pot. Layer the carrots, potatoes, green beans, mushrooms, and tomatoes
Add Liquids & Spices:
Pour in the beef stock, red wine (if using), and Worcestershire sauce. Sprinkle paprika, thyme, salt, and pepper.
Cook Slowly:
Cover with the lid and let it simmer for 2-3 hours without stirring. Check occasionally to ensure the liquid doesn’t evaporate; add more stock if necessary.

2. Chicken & Vegetable Potjiekos
Ingredients
For 6 servings:

1 kg chicken pieces (thighs and drumsticks)

2 tbsp vegetable oil

2 onions, sliced

3 garlic cloves, minced

4 carrots, sliced
-
2 sweet potatoes, cubed

2 cups baby corn
-
1 cup peas
-
2 cups chicken stock
-
1 cup white wine (optional)

2 tsp curry powder
-
1 tsp turmeric
-
1 tsp cumin
-
Salt and pepper to taste
Instructions
Heat the Oil:
Prepare your potjie pot over hot coals and heat the oil.
Brown the Chicken:
Brown the chicken pieces on all sides. Remove and set aside.
Sauté the Onions & Garlic:
Sauté the onions and garlic until fragrant.
Layer the Ingredients:
Place the chicken back in the pot. Layer the carrots, sweet potatoes, baby corn, and peas.
Add Liquids & Spices:
Pour in the chicken stock and white wine. Sprinkle curry powder, turmeric, cumin, salt, and pepper.
Simmer Gently:
Cover and let it simmer for 1.5 to 2 hours. Avoid stirring to maintain the layers.
Serve & Enjoy:
Serve with rice or freshly baked bread.
