Bunny Chow Recipe

Bunny Chow is a popular South African street food originating in the Indian community of Durban. It’s a delicious, hearty dish from hollowed-out bread filled with spicy curry. Traditionally, it's made with mutton or chicken curry, but vegetarian versions are also popular. Here's how you can make this iconic dish at home.

Ingredients

For the Curry:

  • 500g mutton, chicken, or vegetables (potatoes, chickpeas, or a mix)

  • 2 tbsp vegetable oil

  • 1 large onion, finely chopped

  • 2 garlic cloves, minced

  • 1-inch piece of ginger, grated

  • 2 tbsp curry powder (adjust to taste)

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp garam masala

  • 2 tomatoes, chopped

  • 1 tsp turmeric

  • 1-2 green chilies, chopped (optional)

  • Salt to taste

  • Fresh coriander leaves for garnish

For the Bunny Chow:

  • 1 loaf of white bread (unsliced)

  • Fresh coriander leaves for garnish

  • Sliced red onions, chopped chilies, and carrot salad for serving

Instructions

1. Prepare the Curry:

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until they are soft and golden brown.

  2. Add the minced garlic, grated ginger, and green chilies (if using) and cook for another 2 minutes until fragrant.

  3. Stir in the curry powder, ground cumin, coriander powder, garam masala, and turmeric. Cook the spices for about 2 minutes to release their flavors.

  4. Add the meat or vegetables and cook until browned.

  5. Add the chopped tomatoes and salt. Cook until the tomatoes are soft and blended into the sauce.

  6. Add 1 cup of water (adjust as needed) and cover the pot. Let the curry simmer for 20-30 minutes, stirring occasionally, until the meat is tender, or the vegetables are cooked through.

2. Prepare the Bread:

  1. Cut the loaf of bread into halves or quarters, depending on the portion size you prefer.

  2. Hollow out the center of each piece, creating a bread bowl. Keep the removed bread pieces to serve on the side.

3. Assemble the Bunny Chow:

  1. Spoon the hot curry into the hollowed-out bread pieces.

  2. Garnish with fresh coriander leaves and serve with the scooped-out bread on the side.

  3. Enjoy your Bunny Chow with sliced red onions, chopped chilies, and carrot salad for extra crunch and flavor!
